Can I swap one type of yeast for another?

The answer

Yes, you can usually swap yeast types. Active dry and instant yeast can be substituted one for one by weight or volume, according to Red Star Yeast and King Arthur, though active dry may rise a little slower. Fresh yeast is different: Red Star states that one 2 oz (about 57 g) cake equals three 7 g packets of dry yeast. Bread machines may need about 25% less instant yeast. Watch the dough for volume and bubbles rather than relying on a fixed time.
